Il Gouf Custom MS-07B-3 è una variante aggiornata del Gouf MS-07B che è stato introdotto poco dopo l'MS-09B Dom.
Appare per la prima volta nell'anime Mobile Suit Gundam: The 08th MS Team.
Era inteso come contromossa ai nuovi Mobile Suit della Federazione, e per sostituire il MS-06J Zaku II Ground Type.
Nonostante lo stop alla produzione di MS-07B, lo sviluppo del Gouf continuò e dopo diversi passaggi si arrivò al Gouf Custom MS-07B-3.
Questo Mobile Suit presente diverse modifiche rispetto all'MS-07B, come l'eliminazione delle scomode mitragliatrici da 75mm.
Lo scudo è stato inoltre modificato per essere in grado di alloggiare la Heat Sword del Gouf e di trasportare una pistola da 75mm, migliorando notevolmente la potenza di fuoco del Mobile Suit.
